Taking its name from the Latin salvare, "which saves," sage is renowned for its myriad virtues. This Mediterranean plant has been used since ancient times, in sacred rituals as well as in cooking, cosmetics, and aromatherapy. Its mauve flowers and velvety leaves emit a powerful herbaceous and animal scent, known in the garden to naturally repel pests. A must-have in perfumery, the essence obtained by distillation of the whole plant is used as much for its green and aromatic profile as for its tenacity.
